Memorial Day Eats

Memorial Day is a day that’s notorious for it’s hamburger-and-hot dog-filled cookouts and picnics. Well, as usual, I went on a quest for something different to make for baby’s first picnic.  Not that he’s eating hamburgers and hot dogs. Of course, another requirement was that it had to be quick and easy.  Enter Pulled Barbeque Chicken -slow cooker style of course!

 

Ingredients:

3 chicken breasts

12 oz of barbeque sauce (I used Sweet Baby Ray’s Honey Barbeque)

1/2 cup of Italian dressing

1/4 cup brown sugar

2 Tbsp Worcestershire sauce

 

Steps:

1. Butterfly chicken and add to slow cooker

2. Mix barbeque sauce, dressing, brown sugar and Worcestershire sauce in a bowl and pour over chicken.

3. Feel free to spice it up!  I added salt, pepper, and garlic.  Perhaps next time we’ll go spicier….

4. Cook on high for 3-4 hours or on low for 6-8 hours!

Since we wanted this for our lunchtime picnic, I made it the day before on high.  It’s worth noting that this was delicious served cold on a hamburger bun!

Happy Memorial Day! I hope as you enjoy your holiday you take time to remember those that gave their lives for our freedom.  On a beautiful day like today, spending time with my husband and baby, I know I did.
