Happy 2013 All!
No story to write here, but thought I’d post one of my own concoctions. Hey, gotta keep life interesting, right?
Onion Vinaigrette Chicken
2 chicken breasts, butterflied
1 large onion
1/4 cup red wine vinegar
2 tbsp olive oil
4 cherry or grape tomatoes, halved
salt, pepper, rosemary, thyme, to taste
Preheat the oven to 350 degrees.
Slice the onion into 1/2″” thick slides and lay on bottom of lightly greased baking pan
Salt and pepper chicken and place in pan (flip over so unseasoned side is on top)
Season other side of chicken with all spices
Mix together vinegar and oil, then pour over chicken
Bake for 30-25 min (add cherry or grape tomatoes halves about 15 minutes in)
I served this with french fries and salad (vinaigrette dressing goes best).
