As the title of this post suggests, I love this recipe because it’s so simple to make. It’s the perfect meal for a chilly day as winter get closer. It’s especially good for all those hosting Thanksgiving…throw this together the day before, when you’re too busy preparing turkey and pies to make dinner.
2-3 lbs of eye of round roast, or chuck roast
1 Spanish onion
1 package of dried onion soup mix
~1/2 cup of water
salt, pepper, garlic powder, onion powder, paprika to taste
potatoes (I used about 10 baby golden dutch potatoes. If using anything larger, cut in halves or quarters)
Cut the onion into slices about 1/4 inch thick. Lay flat in the bottom of a crockpot.
Place roast on top of the onions. Season with the salt, pepper, garlic, onion, and paprika…don’t be afraid to be generous!
Place potatoes around the roast.
Mix the onion soup mix with the water and slowly poor over the roast.
Cook on low for 8-10 hours, and enjoy!
