Lately I realized that I don’t do a lot of baking. Sure, I make the occasional batch of cookies around the holidays. I’ll even make a cake for a birthday. Other than that, I’d much rather be making something that can be a full meal and allows me to play with different spices and ingredients.
However, I have a bad habit of buying a bunch of bananas and not eating them all before they start to become overripe. I end up wrapping them up in foil and sticking them in the freezer. I was also looking for something new to eat with my yogurt in the morning. Hence this post for a “healthy” banana bread.
This recipe is pretty simple to follow. The egg whites, instead of using a whole egg, through me for a loop. I’ve never separated an egg before. My first attempt was a failure, yet amusing, as I broke the yoke while cracking it open. In attempt to salvage as much as possible, I ended up holding the egg, sans shell, in my hand while I tried to pull away bit of egg white. I would’ve taken a picture, but, uh, my hands were full of egg. The second egg went much better.
The recipe calls for applesauce and cinnamon. I used a little less cinnamon in this batch though, because the only applesauce I had already had cinnamon in it.
It’s also worth noting that the recipe in the link above mention mixing in oil in the directions, but not applesauce…and oil is not even listed as an ingredient. So watch out for that typo.
My assessment is this bread was pretty good, but not as good as what my sister used to make. I don’t know if that’s because of the egg whites or because of me. Or maybe the fact that my bananas were frozen, not fresh. Have a good banana bread recipe? Feel free to share.
Well now I have to start researching more things to bake. I just hope I can find something semi- healthy!
