Mom’s Potato Salad

Hey all!

Just a quick post about one of my favorite summer dishes–potato salad!  I got this recipe from my mom and made it when my in-laws came to visit.



6-7 red potatoes

1 small onion

1 cup celery, chopped

4 hard boiled eggs

2 dill pickle spears, chopped

1 cup mayonnaise ( I used light)

1 tablespoon of mustard

1-2 tablespoons of sugar

drop of olive oil

garlic powder, salt, pepper

Boil the potatoes for about 20 min or until you can pierce them with a fork.  They should be soft, but not splitting. Drain and cool, then peel them and cute into cubes.  If you peel them when they are warm, the skins practicallly slide off themselves.

Dice the onion, and add to the potatoes along with the celery and chopped  pickle spears

Cut the hard-boiled eggs into bite-sized pieces and add to the potatoes as well.

Then, add some garlic powder, sald, and pepper to taste.

In a separate bowl, mix the mayo, mustard,  sugar and oil until smooth.  Pour over the potatoes and mix to taste.

Decorate with additional slices hard-boiled egg if desired.  Refrigerate, and enjoy!

The finished product–yum!
